Our chef: Dennis Van Meir

Trained in Antwerp

Dennis Van Meir started in 1990 as an apprentice cook at Restaurant Petrus and worked his way up through La Pérouse and De Matelote, two Antwerp houses that held Michelin stars in those years and where fish took the lead. At Docks Café he ran the oyster bar and every fish and shellfish preparation.

Ten years in England

After years as a chef in Antwerp — Table d'Anvers, Hippodroom, the Radisson SAS Park Lane and Minerva, where guests were still served by the rules of silver service — he moved to Kent. First to Le Petit Poisson in Herne Bay, a fish restaurant where freshness and provenance came before anything else, then as chef of the Royal Cinque Ports Golf Club in Deal.

Today at Maritime

Since September 2026 he has been at our stove. His whole career comes together here: mussels, fish and shellfish, prepared the classic way. No frills, no fashion — good fish needs little, but that little has to be right.
